May is National Salad Month and with warmer weather here, it’s the perfect time to try some new salad recipes. Not only is a crisp cool salad refreshing during our summer season, but salads are also a way of incorporating healthy ingredients into all of our meals. Here are a few of Belclaire Homes’ favorite salad recipes:
Basil-Balsamic Pasta Salad: This is our favorite pasta salad recipe because it’s fresh, easy and has a bold flavor. All you need is pasta, fresh basil, fresh spinach, grape tomatoes, mozzarella and your favorite balsamic dressing. Make this once and it will be a favorite in your household!
Corn Salad With Hummus, Feta, Peppers and Chicken: Yes, you can have a salad without green lettuce or spinach, and this is our favorite example! With only has five ingredients, it’s also super easy. All you need is corn, hummus, feta, orange or yellow bell peppers, and grilled chicken breast. The hummus and feta give it a great flavor (no dressing necessary!) and the yellow or orange bell peppers add a touch of sweetness.
Chicken & Swiss BLT Salad: Some salads get a bad rap for not being hearty enough. That’s why we included this satisfying recipe. The chicken and bacon add a substantial amount of protein. And while the recipe calls for Thousand Island dressing, we also love using a blue cheese dressing with this one. Enjoy!
Grilled Avocado & Salmon Salad Recipe: This salad is also substantial enough to make for dinner. It uses healthy grilled chicken breast and avocado that is complemented by a homemade lime herb dressing. The pistachios also give it great crunch!
Minty Pineapple Fruit Salad: If you are truly committed to celebrating National Salad Month, have a salad with every meal of the day! Start with this fruit salad for breakfast. It uses fresh pineapple, strawberries and grapes, and incorporates three surprising ingredients for the dressing: lemonade, honey and mint. So fresh!
